How To Make A Delicious Pastillas De Leche
Pastillas de Leche or mostly known as Pastillas is a milk-based confectionery with its origins in the town of San Miguel in Bulacan, Philippines. From the town of San Miguel, Bulacan the pastillas making business spread to the other Philippine regions such as the provinces of Masbate and Cagayan. Pastillas de Leche were originally home-made by carabao-rearing farmers. It is a small-scale industry on the food product that soon grew, with the pastillas made from either cow milk or carabao milk or sometimes both. Refined sugar and calamondin juice are also added in the pastillas during its process.
In San Miguel, Bulacan, a Pastillas Festival has been celebrated every May and it started in 2006. The paper cut form of the wrapper is also linked to the Pastillas Festival and it involves making elaborate paper cut designs using colorful wrappers.
Throughout the years, pastillas has evolved and branched out. Factories and pastillas making businesses are now offering various flavors of Pastillas de Leche. Some of these flavors that are now offered are Mocha, Ube and Langka. In addition to this, the pastillas making businesses are set to expand their production by opening more branches around the country. Most pastillas businesses start with a small amount as starting capital but they have an increase in profit of almost Php40,000 a month.
Pastillas are available almost everywhere, from shops, grocery stores and sari-sari stores or convenience stores. The most common flavors of pastillas de leche are chocolate, peanut and the classic milk flavor. The size of pastillas are about one inch in diameter and some are shaped like a ball. You can buy it individually, in a pack of 20’s and a pack of 50’s.
The origin of this sweet candy came way back from the Spanish colonization of the country. Pastillas de leche means “milk candy” in Spanish. Because of its sweet and delicious taste, the Filipinos adopted the recipe and improved the taste and the flavors over time.
How to make pastillas de leche
Here are the ingredients to make pastillas de leche:
- 1 cup of evaporated milk
- 1/3 cup of milk powder½ kilo of white sugar
- 1 can condensed milk
few drops of vanilla extract
1 can condensed milk
few drops of vanilla extract
Note: if making more, you can just make this as the ratio

Steps on how to make pastillas de leche
In the cooking pan, boil the evaporated milk until you see the evaporation in the liquid. You may see around ¾ left from the original evaporated milk.
Place the boiling evaporated milk in the condensed milk and continue mixing it.
Make sure that you measure the powdered milk, it should be at least 1/3 cup and add it into the boiling mixture. Keep mixing the mixture until the powdered milk is completely dissolved.
Adding vanilla extract will give out good fragrance of vanilla in the Pastillas de Leche. It will also give out a little twitch in the taste.
The texture of the mixture will change as the milk evaporates, this step will take around 10 minutes. While waiting you still have to mix it in order to even out the heat to the mixture. Stiffing of the mixtures on the side can be a sign that it could be already cooled just give it some time after seeing them while mixing. Just make sure not to overcook it, it will turn black if it is overcooked.
In a mixing bowl, put in the ice, water and salt to create an ice bath. It is suggested to prepare a glass bowl so that the heat will not go to your hands after transferring. You may want to put some butter to the inner surface of the bowl so that the mixture won’t stick. Once you are reading with everything, you can transfer the boiled mixture to the glass bowl and then put it into the ice bath. In the ice bath it could take minutes, so you need to watch it better.
